Is the wall I want to open load-bearing?

It is not something to judge by eye — walls that look identical can carry very different loads. The direction of the joists above, what sits over the wall, and the framing are assessed, and where it is load-bearing the opening needs an engineered beam and support.

Do I need a permit to cut an opening in a wall?

If the wall is structural, yes, and you will normally need drawings showing how the load is carried once the opening is made. Those are prepared for permit review, and the beam or lintel is sized before any cutting begins.

How is the ceiling held up while a bearing wall is opened?

Temporary shoring takes the load on both sides before the wall is cut, and it stays until the new beam and its posts are installed and bearing. That sequencing is supervised in the field because it is the part where getting the order wrong is dangerous.
